[Banana Recipes] How to make Happy Mothers Day Banana Bread Gift?

Banana Recipes, Happy Mothers Day gift, Banana Bread Gift, How to make Paleo Banana Bread, Banana Health Benifits, Banana Healthy Food
It never hurts to be creative, especially when it comes to gift giving.  This of course it not my original idea but it is an amazing way to package up my banana bread in a new flavor and give some delicious gifts.  The awesome thing is these seal themselves with the heat from the bread out of the oven, so no canning necessary and you can make them a few days in advance.  I got a little crazy with the flavors but this is one of my favorite variations that I have never shared with you.  Mother’s day is a special occasion so you get the special recipe.  I can’t think of a better way to tell any mom in your life you love them then giving them delicious healthy food.

Before you ask, I do not know how long these will last but since I keep my banana bread covered for up to a week I bet these will be fine too.  Of course, you don’t have to follow the recipe for this variation.  You can use the original or the other variations HERE.  All I care about, is that you make this recipe and spread the Banana Bread love.  You don’t have to use these half pint jars either, you can make bigger ones in a full pint jar.  Can’t wait to read your comments about how you make these and how people love them.

Once all of your ingredients are blended, add in your coconut flour, baking soda, baking powder, vanilla, and sea salt and mix well
Grease 10 half pint mason jars using coconut oil or butter
Pour in your batter about halfway up each half pint mason jar
Using your chocolate cinnamon swirl from above, divide it evenly throughout the 10 jars and then use a butter knife to swirl it around in the batter
Place all 10 mason jars in a rimmed baking sheet and place in the oven
Bake for 25 minutes or until a toothpick inserted into the center comes out clean

Paleo Banana Bread
Prep time
10 mins
Cook time
60 mins
Total time
1 hour 10 mins
Serves: 8
Ingredients
4 bananas, (2 1/2 cups mashed or 575 grams)(they can be yellow bananas)
4 eggs
1/2 cup almond butter (140 grams)(or coconut, sunflower seed, macadamia nut, etc butter)
4 tablespoons grass-fed butter, melted (can substitute coconut oil)
1/2 cup coconut flour (75 grams)(or almond flour, macadamia nut meal, etc)
1 tablespoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder (gluten free or homemade)
1 teaspoon vanilla
pinch of sea salt
Instructions
Preheat your oven to 350 degrees fahrenheit
Combine your bananas, eggs, and nut butter, and grass-fed butter in a blendtec, blender, food processor, or mixing bowl and mix well (if using a mixing bowl you need a good hand-mixer)
Once all of your ingredients are blended, add in your coconut flour, cinnamon, baking soda, baking powder, vanilla, and sea salt and mix well
Grease a 9×5 glass (see notes) loaf pan with a fat of your choice (I used grass-fed butter). If you use a metal pan it will probably bake in 35-40 minutes so start checking at 35 to ensure the middle stays moist
Pour in your batter and spread it evenly throughout
Place in your preheated oven and bake for 55-60 minutes or until a toothpick inserted into the center comes out clean
Remove from oven and flip your bread out onto a cooling rack
Slice and serve
Variations
Cranberry Orange – Only use 3 tablespoons of butter. Add zest of one whole orange diced, juice of one whole orange, and1 cup dried cranberries or fresh if you want
Chocolate Blueberry – Add 1 cup of fresh blueberries and 1/2 cup of cocoa powder
Pumpkin Pecan – Reduce the almond butter to 1/4 cup and add 1/2 cup of pumpkin puree and 1 cup of roughly chopped pecan pieces
Notes
If you want to make these into muffins, use the same recipe and for mini muffins bake approximately 25 mins and normal size muffins 30-35 minutes.
